Our Arrangement

Climate and environmental protection have always been important to us.
This is also why we chose to settle here. When we started building our business over 25 years ago and tried to breathe new life into Nyksund, preserving nature and contributing to climate protection were essential to us. While climate protection wasn't as prominent 25 years ago as it is today, we have spent years working on it.

Climate protection for buildings primarily means good insulation.
This is not easy in old buildings, but we have managed to modernize the insulation throughout the entire building. Our current challenge is some of our windows. Modernizing them would compromise the concept we have built our business on – preserving as much of the original structure as possible and providing authentic spaces for you. However, we have already developed solutions that we hope to implement in the coming years.

Climate and environmental protection begin with purchasing goods and end with waste disposal.
We are pleased that most of our suppliers are also environmentally certified. We buy our goods locally and unprocessed as much as possible. Nearly everything we offer in our restaurant is made in-house, which we are very proud of. Waste management also depends on our guests. We appreciate your efforts to use our waste sorting system. Throwing something in the right bin may seem trivial, but with hundreds of guests, every action matters.

Food waste is a global issue, and we aim to minimize it.
On our buffet, we ask guests to take only what they will eat – you can always go back for more. Our à la carte dishes are generously portioned, but we’d rather serve more for free than throw away uneaten food. Kitchen waste is composted or fed to our chickens. Unfortunately, we cannot reuse returned food from guests.

A few years ago, we had over 80 items on our breakfast buffet, but much of it had to be discarded before the expiration date. For the sake of the environment, we’ve reduced the selection to the most popular items. We still offer a wide range for allergy sufferers, vegetarians, and vegans. If you miss something on our buffet, feel free to ask – we might have it in the kitchen.

We reuse old newspapers and paper to create new paper.
We turn cooking fats into soap and produce many of our cleaning products from waste materials.

We are not perfect.
What seems like a good solution today may have a better alternative tomorrow. We always welcome suggestions on how we can protect the environment better.
